ScrapLove Summer of Scraplovin' Challenge

In an effort to get more motivated and back into Scrapping rather than collecting - I joined up over at Scrap Love and signed up for their Summer of Scraplovin’ Challenge. I drug Jen along with me for the ride :) Looks like it should be fun - hope I can keep up!

Old Fashioned Oatmeal Raisin Cookies

Jen & I were chatting and somehow - we came upon the subject of our love for Oatmeal Cookies. I mentioned that I had an awesome recipe for Oatmeal Raisin Cookies and Jen made me promise to share it on my blog.

So here ya go Jen!

1 Cup Raisins
1 Cup Water
3/4 Cup Shortening
1 1/2 Cups Sugar
2 Eggs
1 tsp Vanilla
2 1/2 Cups Flour **
1 tsp soda
1 tsp salt
1 tsp cinnamon
1/2 tsp baking powder
1/2 tsp cloves
2 Cups Oats
1/2 Cup chopped Nuts (I omit this)

**If using Self Rising Flour, omit soda, salt & baking powder.

Simmer raisins & water over medium heatuntil raisins are plump, about 15 minutes. Drain raisins, reserving liquid. Add enough water to reserved liquid to make 1/2 Cup.

Heat oven to 400 degrees.

Mix shortening, sugar, eggs & vanilla. Stir in reserved liquid. Blend in remaining ingredients, including raisins. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased baking sheet. Bake 8 to 10 minutes or until light brown.

Makes about 6 1/2 dozen cookies.

Wii Fit

I ordered mine off ebay and it came yesterday. Oh my!! So much fun. Before buying the Wii - I have to admit that this seemed ridiculous to me - but Mitch wanted me to get it - said he wanted something to break up the monotony of running on the treadmill.

And I have to say, it was a great call on his part. I love it! Hula Hoops, Step, Yoga and more. Although I could do without the tough love - of making my Mii look more like me (fat) LOL.

So if you are thinking of getting the Wii Fit - I say go for it - money well spent!

Trampoline

Whenever we go to my sisters - the kids always look forward to jumping on the trampoline. They spend so much time outside playing on hers and the last time we were there - they even slept outside on it.

My MIL has always been against it - said it was an accident waiting to happen. My sister has had hers for over 10 years with no accidents. So I talked it over with DH and we decided to go ahead and get them one. I ordered one and when it got here it took Braeden and I awhile to put together - but the kids LOVE it and I even like to jump on it. I love being able to look out the window and see them outside playing on it.

We have talked with the kiddos about the safety rules, so hopefully we will have years of safe fun with the trampoline, and won’t prove MIL right.

Awesome Ribs

When my Uncle Jesse & Aunt Pauline were here, she made Awesome Ribs. Braeden scarfed them up and they were, well, awesome! So she gave me the recipe - she had made lots of copies of it - and has been handing out out to everyone that has them LOL.

I made them tonight for the neighbors - and ended up having to copy the recipe for them!!

So now I share it with you, it isn’t really a recipe - but a way of cooking them. They come out very tender!

Awesome Baby Back Ribs
1,2, or 3 Racks of Ribs
Cookie Sheets
Foil
BBQ Dry season (must contain: garlic, onion, salt & pepper) (I used only that)
Your favorite BBQ sauce (I used Sweet Baby Ray’s Honey BBQ Sauce)

Set oven to 280 degrees, no need to preheat.

Place Ribs on cookie sheet.

Sprinkle seasons on Ribs. Season to desired taste.
Spicy - add more.
Not so spicy add less
Really spicy add extra hot spices

    DRY SEASONS ONLY

Cover the entire cookie sheet with foil.

    Completely sealing the cookie sheet

Place in over for 2 hours for the 1st rack of ribs, additional racks add 1 hour of cooking time per rack.

    DO NOT PEEK

After cooking time is up - open the foil. Cover Ribs with BBQ Sauce - Place back in oven without cover or place on warm low BBQ. Cook at same temp for another 1/2 hour - adding BBQ sauce to your desired amount.

Stepping down from the Shanty

I have decided to step down as an owner of Scrap Shanty. Having been involved in owning or admining a board for the last several years - it is time for a breather! With DH being gone, and it being summer time - this is the perfect opportunity to spend more time with the kiddos doing things together as a family.

I’m still gonna hang out at the Shanty - just gonna be regular folk though :)

Rattlesnake Pasta

Okay, cause Lacey & Mel asked - I’ll clarify.  It really isn’t rattlesnake at all - LOL.  It’s called that, cause of the pepperjack cheese in it - gives it a “bite”.

Penne Pasta, Alfredo Sauce, Chicken, Mushroom, Jalapeno’s (optional) and pepper jack cheese.

Cube chicken and cook through.  Cook Penne according to pkg instructions.  Drain, return to heat.  Add Alfredo Sauce and cooked chicken, mushrooms and jalapenos - heat through and Stir thorougly.  Pour into 9X13 baking dish.  Cover completely with shredded Pepper Jack Cheese.  Bake at 350 degrees for approx 30 minutes or until cheese is melted and dish is heated through.

Recipe is something DH concocted after eating a similar dish at CiCi’s pizza in Rhode Island

Wii love

Mitch told me to go get a Wii and a couple of games for the younger 2 kiddos today - as an early birthday present. So with some advice from some friends and the clerk at Game Crazy - we bought our Wii and Mario Kart and Mario Party 8.

As soon as we got home, we hooked it up and played Wii Sports - tennis, then bowling, then golf. I sucked at tennis and golf. Then we played Mario Party 8 - which I thought was boring. Then the kids played games they had rented - Bratz, and Ninja Reflexes. After awhile it was time for Mario Kart - this even brought the oldest kidlet out of his room - and after a bit he wanted to play boxing.

So he boxed his little sister - it was great! Too hard to describe - so here is the video

So I’m killing time - reading blogs today - and I come across a post on Cynthia’s blog (I am a Coconut) entitled Does Steve Perry look different to you?

How the heck did I miss this news?  I am such a Journey fan!!  This just blows me away!!
